Avocado and Mango Salad.

Ingredients:
Ripe avocados, diced
Fresh mango, diced
Red bell pepper, diced
Red onion, finely chopped
Fresh cilantro, chopped
Lime juice
Extra virgin olive oil
Honey
Salt and pepper to taste

Instructions:
In a bowl, combine diced avocados, diced mango, diced red bell pepper, finely chopped red onion, and chopped cilantro. In a separate small bowl, whisk lime juice, olive oil, honey, salt, and pepper to make the dressing. Pour the dressing over the salad and toss gently to mix.

Quinoa and Roasted Vegetable Salad.

Ingredients:
Cooked quinoa
Roasted vegetables (such as sweet potatoes, carrots, and Brussels sprouts), chopped
Baby spinach or kale
Dried cranberries
Goat cheese, crumbled
Balsamic vinaigrette

Instructions:
In a bowl, mix cooked quinoa, chopped roasted vegetables, baby spinach or kale, dried cranberries, and crumbled goat cheese. Drizzle with balsamic vinaigrette dressing and toss gently to combine.

Indonesian Gado Gado Salad.

Ingredients:
Steamed or blanched vegetables (such as green beans, cabbage, and carrots), cut into bite-sized pieces
Boiled eggs, sliced
Fried tofu, cubed
Bean sprouts
Cucumber, sliced
Fried shallots
Peanuts, chopped
Indonesian peanut sauce

Instructions:
Arrange the steamed or blanched vegetables, boiled eggs, fried tofu, bean sprouts, and sliced cucumber on a plate. Sprinkle with fried shallots and chopped peanuts. Serve with Indonesian peanut sauce.

Caprese Pasta Salad.

Ingredients:
Cooked fusilli or penne pasta
Cherry tomatoes, halved
Fresh mozzarella balls (bocconcini), halved
Fresh basil leaves, torn
Balsamic glaze
Extra virgin olive oil
Salt and pepper to taste

Instructions:
In a bowl, mix cooked pasta, halved cherry tomatoes, halved mozzarella balls, and torn fresh basil leaves. Drizzle with balsamic glaze and olive oil. Season with salt and pepper and toss gently to combine.

Chinese Chicken Salad.

Ingredients:
Cooked and shredded chicken breast
Napa cabbage, shredded
Carrots, julienned
Mandarin orange segments
Sliced almonds, toasted
Wonton strips (optional)
Sesame ginger dressing

Instructions:
In a large bowl, combine shredded chicken, shredded Napa cabbage, julienned carrots, mandarin orange segments, and toasted sliced almonds. Add wonton strips for extra crunch if desired. Drizzle with sesame ginger dressing and toss until well coated.

Ingredients:
Mixed greens
Pomegranate seeds
Walnuts, chopped and toasted
Goat cheese, crumbled
Pomegranate vinaigrette

Instructions:
Arrange mixed greens on a plate. Top with pomegranate seeds, chopped toasted walnuts, and crumbled goat cheese. Drizzle with pomegranate vinaigrette and toss gently to mix.

Thai Green Papaya Salad (Som Tum).

Ingredients:
Green papaya, julienned
Cherry tomatoes, halved
Green beans, cut into pieces
Roasted peanuts, chopped
Fresh cilantro, chopped
Lime juice
Fish sauce
Palm sugar or brown sugar
Thai bird’s eye chilies (optional)
Garlic, minced

Instructions:
In a mortar and pestle, pound the Thai bird’s eye chilies (if using) and minced garlic. Add lime juice, fish sauce, and palm sugar or brown sugar to create the dressing. In a bowl, mix julienned green papaya, halved cherry tomatoes, cut green beans, chopped roasted peanuts, and chopped cilantro. Pour the dressing over the salad and toss well.

Greek Watermelon Salad.

Ingredients:
Watermelon, cubed
Cucumber, diced
Kalamata olives, pitted and sliced
Red onion, thinly sliced
Feta cheese, crumbled
Fresh mint leaves, torn
Balsamic glaze
Extra virgin olive oil
Salt and pepper to taste

Instructions:
In a bowl, combine cubed watermelon, diced cucumber, sliced Kalamata olives, thinly sliced red onion, crumbled feta cheese, and torn fresh mint leaves. Drizzle with balsamic glaze and olive oil. Season with salt and pepper and toss gently to combine.

Ingredients:
Ground beef or turkey, cooked and seasoned with taco seasoning
Romaine lettuce, chopped
Black beans (cooked or canned), drained and rinsed
Corn kernels (fresh, canned, or frozen)
Cherry tomatoes, halved
Avocado, diced
Shredded cheddar cheese
Tortilla chips, crushed
Salsa
Sour cream

Instructions:
In a large bowl, mix cooked and seasoned ground beef or turkey, chopped romaine lettuce, drained black beans, corn kernels, halved cherry tomatoes, diced avocado, and shredded cheddar cheese. Top with crushed tortilla chips. Serve with salsa and sour cream.

Ingredients:
Cooked chickpeas (cooked or canned), drained and rinsed
Diced cucumbers
Diced tomatoes
Diced bell peppers (assorted colors)
Fresh parsley, chopped
Fresh mint leaves, chopped
Lemon juice
Extra virgin olive oil
Ground cumin
Ground coriander
Paprika
Salt and pepper to taste

Instructions:
In a bowl, mix cooked chickpeas, diced cucumbers, diced tomatoes, diced bell peppers, chopped parsley, and chopped mint leaves. In a separate small bowl, whisk lemon juice, olive oil, ground cumin, ground coriander, paprika, salt, and pepper to make the dressing. Pour the dressing over the salad and toss gently until well combined.
