Broccoli and Bacon Salad.

Ingredients:
Broccoli florets, blanched
Crispy bacon, crumbled
Red onion, thinly sliced
Dried cranberries
Sunflower seeds
Greek yogurt
Apple cider vinegar
Honey
Dijon mustard
Salt and pepper to taste

Instructions:
In a bowl, combine blanched broccoli florets, crumbled bacon, thinly sliced red onion, dried cranberries, and sunflower seeds. In a separate small bowl, whisk Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the dressing. Pour the dressing over the salad and toss gently to coat.

Fattoush Salad.

Ingredients:
Romaine lettuce, chopped
Cucumber, diced
Tomato, diced
Radishes, thinly sliced
Green onions, chopped
Fresh parsley, chopped
Fresh mint leaves, torn
Pita bread, toasted and broken into pieces
Sumac spice
Lemon juice
Extra virgin olive oil
Salt and pepper to taste

Instructions:
In a large bowl, mix chopped romaine lettuce, diced cucumber, diced tomato, thinly sliced radishes, chopped green onions, chopped parsley, and torn mint leaves. Add toasted pita bread pieces and sprinkle with sumac spice. In a separate small bowl, whisk lemon juice, olive oil, salt, and pepper to make the dressing. Pour the dressing over the salad and toss well.

Grilled Vegetable Salad.

Ingredients:
Assorted vegetables (zucchini, bell peppers, eggplant, asparagus, etc.), sliced or cut into strips
Baby spinach or mixed greens
Balsamic glaze
Balsamic vinaigrette
Olive oil
Salt and pepper to taste

Instructions:
Grill the assorted vegetables until tender and slightly charred. Arrange the grilled vegetables on a bed of baby spinach or mixed greens. Drizzle with balsamic glaze and balsamic vinaigrette. Drizzle some olive oil over the top. Season with salt and pepper.

Southwestern Black Bean and Quinoa Salad.

Ingredients:
Cooked quinoa
Black beans (cooked or canned), drained and rinsed
Red bell pepper, diced
Corn kernels (fresh, canned, or frozen)
Avocado, diced
Fresh cilantro, chopped
Lime juice
Olive oil
Cumin powder
Chili powder
Garlic powder
Salt and pepper to taste

Instructions:
In a bowl, combine cooked quinoa, black beans, diced red bell pepper, corn kernels, diced avocado, and chopped cilantro. In a separate small bowl, whisk lime juice, olive oil, cumin powder, chili powder, garlic powder, salt, and pepper to make the dressing. Pour the dressing over the salad and toss to combine.

Ingredients:
Bulgur wheat, soaked and drained
Fresh parsley, chopped
Fresh mint leaves, chopped
Cucumber, diced
Tomato, diced
Green onions, chopped
Lemon juice

In a bowl, mix soaked bulgur wheat, chopped parsley, chopped mint leaves, diced cucumber, diced tomato, and chopped green onions. In a separate small bowl, whisk lemon juice, olive oil, salt, and pepper to make the dressing. Pour the dressing over the salad and toss until well combined.

Ingredients:
Mixed greens
Salami, sliced
Pepperoni slices
Provolone cheese, sliced
Roasted red peppers, sliced
Artichoke hearts, quartered
Kalamata olives, pitted
Pepperoncini peppers
Red wine vinegar
Extra virgin olive oil
Dried oregano
Salt and pepper to taste

Instructions:
Arrange mixed greens on a serving plate. Top with slices of salami, pepperoni, provolone cheese, roasted red peppers, artichoke hearts, Kalamata olives, and pepperoncini peppers.
