Spinach and Strawberry Salad.

Ingredients:
Baby spinach leaves
Fresh strawberries, sliced
Goat cheese, crumbled
Toasted almonds
Balsamic vinaigrette

Instructions:
In a salad bowl, combine baby spinach, sliced strawberries, crumbled goat cheese, and toasted almonds. Drizzle with balsamic vinaigrette dressing and toss gently to mix.

Moroccan Couscous Salad.

Ingredients:
Cooked couscous
Chickpeas (cooked or canned)
Dried apricots, chopped
Sliced almonds
Fresh cilantro, chopped
Lemon juice
Olive oil
Ground cumin
Ground cinnamon
Salt and pepper to taste

Instructions:
In a bowl, mix cooked couscous, chickpeas, chopped dried apricots, sliced almonds, and chopped cilantro. In a separate small bowl, whisk lemon juice, olive oil, ground cumin, ground cinnamon, salt, and pepper to make the dressing. Pour the dressing over the salad and toss until well combined.

Ingredients:
Cooked shrimp, peeled and deveined
Ripe avocados, diced
Cherry tomatoes, halved
Red onion, thinly sliced

Lime juice

Instructions:

Ingredients:
Cooked quinoa
Apples, diced
Celery, thinly sliced
Seedless grapes, halved
Pecans, chopped
Greek yogurt
Honey
Lemon zest

Instructions:
In a large bowl, mix cooked quinoa, diced apples, sliced celery, halved grapes, and chopped pecans. In a separate small bowl, whisk Greek yogurt, honey, and lemon zest to make the dressing. Pour the dressing over the salad and toss gently to coat.

Ingredients:
Napa cabbage, shredded
Carrots, grated
Red bell pepper, thinly sliced
Snow peas, thinly sliced
Edamame beans
Sesame seeds
Rice vinegar
Soy sauce
Honey
Sesame oil
Fresh ginger, grated

Instructions:
In a large bowl, mix shredded Napa cabbage, grated carrots, thinly sliced red bell pepper, snow peas, and edamame beans. Sprinkle sesame seeds over the top. In a separate small bowl, whisk rice vinegar, soy sauce, honey, sesame oil, and grated fresh ginger to make the dressing. Pour the dressing over the salad and toss to combine.

Ingredients:
Cooked orzo pasta
Cucumber, diced
Cherry tomatoes, halved
Kalamata olives, pitted and sliced
Red onion, thinly sliced
Crumbled feta cheese
Fresh dill, chopped

Red wine vinegar
Olive oil
Dried oregano
Salt and pepper to taste

Ingredients:
Cooked rice noodles
Shredded cabbage
Shredded carrots
Red bell pepper, thinly sliced
Green onions, chopped
Fresh cilantro, chopped
Roasted peanuts, chopped
Sesame seeds
Peanut butter
Lime juice
Soy sauce
Sesame oil
Sriracha sauce (optional)

Instructions:
In a large bowl, mix cooked rice noodles, shredded cabbage, shredded carrots, thinly sliced red bell pepper, chopped green onions, and chopped cilantro. Sprinkle roasted peanuts and sesame seeds over the top. In a separate small bowl, whisk peanut butter, lime juice, soy sauce, sesame oil, and a dash of sriracha sauce (if using) to make the dressing. Pour the dressing over the salad and toss well.

Ingredients:
Cooked pasta (such as penne or fusilli)
Romaine lettuce, chopped
Cherry tomatoes, halved
Grated Parmesan cheese
Caesar dressing
Croutons

Instructions:
In a bowl, mix cooked pasta, chopped romaine lettuce, halved cherry tomatoes, and grated Parmesan cheese. Toss with Caesar dressing until well coated. Add croutons on top just before serving.

Honey
Salt and pepper to taste

Instructions:
Arrange fresh arugula on a serving plate. Top with grilled peach slices, prosciutto slices, crumbled goat cheese, and chopped toasted pecans. Drizzle with balsamic glaze, lemon juice, olive oil, and honey. Season with salt and pepper.
