Caprese Salad.

Ingredients:
Fresh mozzarella cheese, sliced
Ripe tomatoes, sliced
Fresh basil leaves
Extra virgin olive oil
Balsamic glaze (optional)
Salt and pepper to taste

Instructions:
Arrange alternating slices of mozzarella and tomatoes on a serving plate. Tuck fresh basil leaves between the slices. Drizzle with olive oil and balsamic glaze (if using). Season with salt and pepper. Serve immediately.

Avocado Toast.

Ingredients:
Ripe avocado
Slices of whole-grain bread
Lemon juice
Red pepper flakes (optional)
Salt and pepper to taste

Instructions:
Mash the ripe avocado with a fork in a bowl. Add lemon juice, red pepper flakes (if using), salt, and pepper. Toast the bread slices. Spread the avocado mixture on the toast. Serve as is or add toppings like sliced tomatoes or a poached egg.

Pasta Aglio e Olio.

Ingredients:
Spaghetti or your favorite pasta
Garlic cloves, thinly sliced
Olive oil
Red pepper flakes (optional)
Grated Parmesan cheese
Chopped parsley (optional)
Salt and pepper to taste

Instructions:
Cook the pasta according to package instructions until al dente. In a pan, sauté the sliced garlic and red pepper flakes (if using) in olive oil until the garlic turns golden. Drain the cooked pasta and toss it with the garlic-infused olive oil. Season with salt and pepper. Serve with grated Parmesan cheese and chopped parsley if desired.

Ingredients:
Assorted vegetables (bell peppers, broccoli, carrots, snap peas, etc.), sliced or chopped
Garlic, minced
Soy sauce
Sesame oil
Vegetable oil
Sesame seeds (optional)
Green onions, chopped (optional)

Instructions:
Heat vegetable oil in a wok or large pan over high heat. Add minced garlic and stir briefly until fragrant. Add the sliced vegetables and stir-fry for a few minutes until tender-crisp. Drizzle with soy sauce and sesame oil, tossing to coat. Garnish with sesame seeds and green onions if desired. Serve over rice or noodles.

Grilled Cheese Sandwich.

Ingredients:
Slices of bread
Sliced cheese (Cheddar, Swiss, or your favorite)
Butter

Instructions:
Preheat a skillet over medium heat. Butter one side of each bread slice. Place one slice, buttered side down, in the skillet. Add the cheese slices on top. Cover with the other bread slice, buttered side up. Cook until the bread is golden brown and the cheese is melted. Flip the sandwich and cook the other side until golden brown. Serve hot.

Ingredients:
Greek yogurt
Fresh berries (strawberries, blueberries, raspberries)
Granola
Honey (optional)

Instructions:
In a glass or bowl, layer Greek yogurt, fresh berries, and granola. Drizzle with honey if desired. Repeat the layers. Top with more berries and a final sprinkle of granola. Serve immediately.

Ingredients:
Cooked and cooled rice (white or brown)
Eggs, beaten
Frozen mixed vegetables
Soy sauce
Sesame oil
Vegetable oil
Green onions, chopped (optional)

Instructions:
Heat vegetable oil in a large pan or wok over medium heat. Add the beaten eggs and scramble them. Add the frozen mixed vegetables and stir-fry until heated through. Ingredients:
Whole wheat tortilla or wrap
Hummus
Sliced cucumber
Sliced bell peppers
Shredded carrots
Baby spinach leaves

Instructions:
Spread a generous amount of hummus on the tortilla. Layer sliced cucumber, bell peppers, shredded carrots, and baby spinach leaves on top. Roll the tortilla tightly into a wrap. Cut in half and serve.

Fruit Smoothie.

Ingredients:
Frozen mixed berries (strawberries, blueberries, raspberries)
Banana
Greek yogurt
Milk (or a dairy-free alternative)
Honey (optional)

Instructions:
In a blender, combine frozen mixed berries, a ripe banana, Greek yogurt, and milk. Blend until smooth and creamy. Add honey if you prefer a sweeter smoothie. Pour into a glass and enjoy!
